Soya Bean Longan Jelly



Ingredients: (Makes about 20 cups)
  • 1L Soya Bean Milk
  • 12.5g Pearl Mermaid Agar-agar powder
  • 250g castor sugar
  • 1.5L water
  • 400mL canned evaporated milk
  • A tin of canned longan or lychee
  • 20 of 150mL plastic cups
Method:
  1. Mix everything together in a large pot except the longan and bring everything to a boil. Stir to make sure everything is melted.
  2. Let it simmer for a 3-5 minutes and scoop contents into the plastic cups.
  3. Once the mixture starts to set, place the longans on top. Chill in refrigerator overnight.
This is the perhaps one of the easiest desserts you can bring during a party and from previous experiences, people do seem to like it. Please do not question me about placing hot liquid into plastic containers. I am fully aware of the hazard but perhaps you could provide a better suggestion?



Best enjoyed on a hot day.

Erm...when my mum makes these, she stir till the mixture is warm through rather than hot before pouring into the plastic cups. Sounds less hazardous???

That's what I told my mom but she says if you use the better quality plastic cups its alright because the surface forms a film quite quickly. *shrugs* I tried telling my mom.

can i confirm this recipe uses 12.5g agar powder with 2 litre water (soy milk + water) ?
Coz my agar powder packet written to mix with 1 litre of water

That's the amount I used and it still sets alright. :)

But if you're using a different agar-agar powder brand it might be different so I'm not to sure about that. I used the Pearl Mermaid brand. :)

Mine doesn't set well (uses other brand) , also coz i didnt cook the agar well
Trying again now using Pearl Brand agar :P

Sammi,
I've finally tried again using Pearl Mermaid Brand agar powder. My agar -agar set well hehe but hor I find that the texture is a little firm.
So now making another batch (2 tsp 1 litre water + 200g evaporated milk +100g sugar) waiting for the results...

wow.. I want to try it this week!!

Can I double the content (2L Soy, 1 packet agar2 powder, 500g c/sugar, 3L water, 800ml e/milk & 2 tin longan)? Or is it better not to do this?

It tastes good! I have tried it twice and wish to change the flavour this time. Can I replace Soya with Pandan? How much pandan should I add in?

Sorry I couldn't reply you earlier because there seem to be an error. Glad it turned out well! :) I've never tried adding pandan flavour but I suppose you can substitute some of the liquid with pandan juice which is just pandan leaves blended in water then strain.

More pandan juice if you wan't stronger pandan flavour. Alternatively, use pandan essence. :)

Ohh.. I had a terrible internet connection 6 days ago...! Besides, I tried replace Soya with Pandan (around 8 leaves) juice, and with Milo (3-4 big spoons) the 2nd day. They taste great!! I love it!! Thx Samantha for sharing this recipe!!

You should be able to get it at a market shops or maybe even some convenient stores. :)
